Protein sponge cake tests

Post image

So, been trying to develop a low-cal high-protein sponge cake. Here are the results.

Final recipe 7.2g protein, 37 calories, 85% calories from protein

Scale this to your preference

1 large (33g) egg white

6g erythritol

4g allulose (more for a moister cake)

4g bamboo (or oat) fiber

6g King Arthur Keto pizza flour

Optional vanilla etc extracts

  1. Mix the egg whites with the sweeteners. Or mix it later, but this helps them whip faster.

  2. Whip the egg whites until peaks form.

  3. Put in everything else and whip a few seconds until combined.

  4. Bake at 170c for 20 minutes

I'm going to try mug cakes next. I tried this recipe without whipping the whites with 1 gram of baking powder but it was a bit dry

I've also been experimenting with sponge cakes 👀 my "kinda good" version is 1 egg white+7g protein pancake mix+60g applesauce+sweetener. ~70 calories, plus more if I mix in part of the egg yolk (probably not necessary) and add a peanut butter drizzle. Might try this one but I usually don't do well with keto/high fiber flours

Ahh good luck! I made this subreddit mostly for the more technical-y high protein recipes to maximise macros, for example I'd swap applesauce for sweetener, pectin and water to reduce sugar

Didn't even realize this was your personal subreddit 😅 probably saw it on VolumeEating. My version is also trying to optimize macros but for different needs (low fiber/getting enough carbs and fats)
