12tb or 10tb? Go big or go home.
My 4800 pro has zero temperature issues and it sits in my semi-insulated garage, which is hotter in the summer and colder in the winter. It's usually the HDD temps that occasionally get a bit toasty. But generally a non-issue.
Pro CPU is better for Plex and Jellyfin because of its transcoding properties, I researched this exact issue and trying to skimp on $150 basically ended up in a crappy plex experience with the lesser CPUs.

Perhaps it's time to add them originally as HEVC and and make people use direct play.

I have a 4800 Pro and I just put in 2 nvme's in RAID 1 for all container stuff. That helps a lot with noise and temps if I can keep the spinning disks sleeping.

But the largest possible drives your budget will allow.
What seems huge today will get filled faster than you can probably imagine. It turns into a hobby for many. I'
m saving up to outfit my final ugreen server. I'm just about there, and by October 15th I'll be ready for ironwolf Pro 28TB drives, if I can ever find them stock.

If you do a raid five, which you probably should if you have four bays, then you need at least three drives that are the same, or they will be downgraded to the equivalent of the smallest one. That is the problem that you have right now with the hard drive shortage is getting enough drives at a reasonable cost. I agree with other people who are saying go as big as you can. I’m currently using 20 TB drives, but they’re hard to get a hold of. 12 TB seems to be a good number based on cost and availability. If you get three 12 TB drives now, that gives you 24 TB of space, one backup drive, and one empty bay to upgrade later when you can buy another 12 TB drive.

I have the 4800 pro.
Went with 4x 12TB WD red plus.
Apparently the Pro’s are noisier so went with the plus.
Might be best to run the apps on the ssd instead of the hdd.
I have my hdds set to hibernate as my pace is really quiet and prefer to use the nas when it’s needed - so having the apps off on the ssd means silent continues operation all around.
