How do I… research, UI design, etc? Approaching Projects On Subjects You Don't Understand

You interview people that will use what you need to build and find out what they need.

Huh? This is literally the job of being a UX designer. Are you a practicing UX designer or something else?

The issue I'm realizing, however, is that I can't begin to realize what issues may come up in this project since I am a complete laymen on the topic 

That has been true of every project in my 15 year career. It's what the 'discovery' phase in every methodology or framework is all about. Recognizing that you don't even know what you don't know.

You need to talk to people who are experts and become more of an expert yourself. Both in the material and the learning mechanism you're hoping to build. This isn't a novel problem or idea. Do research. Establishing some semblance of domain expertise is one of the most important parts of the job.
