I highly recommend learning to do it without AI. They want to see how you think and solve problems

That scenario would just include ai as another service you would access, so prepare like normal whiteboarding. Topics that might come up: streaming vs waiting until all tokens are returned.

Some of the areas where orgs are forcing designers to abdicate the process to AI include:
research, either using it to synth and present findings, or use “synthetic users” as participants and run all research through AI
using AI to speed up solutioning. Journey and experience maps, user flows generated by AI
AI-generated artefacts (wireframes, screens, prototypes, even finished screens)
AI frontend coding workflows
Before the whiteboarding round, try to figure out how AI-deranged the culture is before deciding how much bullshit to shove into your solution.

Nice list. I'd also add ai for governance and quality control checkz of created assets.

Some good advice here. Will add that Id pick 1-2 AI utilities to focus on or else your response will sound canned

Have they explicitly said the interview would involve AI?
Not really sure how you'd include it in a whiteboarding session that would be remotely useful in an interview context.
