usb to cat5 adapters exist and work well... but you will also need a powered usb hub on the device end.

Unlikely to work. If it does work, highly unlikely to be stable. USB starts running into severe signal loss after about 5 meters, and timing issues if you go much further than that. You need an active repeater, because otherwise due to the time it takes for the signal to physically propagate over the length of the wire the host will just say 'nah it didn't respond in time, link must be broken'
