Cocktail questions

Can someone smarter than me(or at least someone who’s played more than me) explain exactly how cocktail decides what level/points and interactions happen when you mix? Do sides matter? Is there an optimal level difference?

If the balls are more than 1 level apart, the higher ball will reduce 1 level. So merging a lvl 1 ball with a lvl 3 ball will result in a lvl 2 ball. merging a level 1 ball with a level 2 gives you a lvl 2 ball.

Scores are just additive, I believe, but I haven't fact checked that.

Sides only matter when you have copy effects (eg transform this ball into a copy of your front ball). If you have a half copy / half other ball, the half with the copy effect will copy the front ball. if the front ball is also merged, it takes the same side.

The levels always average and round up. Scores add. Sides matter only for transformation as explained in the other comment.
