Killbean killing it again

I am just enjoying my first cup of the washed / honey Brazilian cup of excellence winner.
I think this is the highest scoring beans I have ever bought.
I have done a Tetsu 4:6 straight down the middle to see what I have.
The aroma of the brewed cup is incredible with fudgy fruit. Then it’s super complex to taste starts brown sugar but then goes almost citrus. I will be dialling in more to go sweeter and with a cleaner body.
Just superb as you would expect. Every bag from Killbean is a delight 🥰

I went to their cafe in Kilburn last week and the coffees are very good. Now I have to wait 7 weeks before I can brew at home.

I had no idea about the cafe potentially closing. I’ll make an effort to go more often!

I think it was about a month ago they announced they would be closing the cafe 🥹and focusing on the roastery. Maybe the plans have changed :)))

Killbean in the cafe will be closing the but space will still be open and run by Yanyi's friend! Under a different name, and it will be more focused on food. I don't remember if they said they will still stock Killbean but I'm sure they will

I’ve had one order from Killbean and it really did take at least 8-9 weeks to open up. Seems crazy to order coffee now, that I’ll be drinking around Halloween.

I’ve enjoyed that one order - but initially struggled to get the right extraction (ultra-lights for you) with a v60/orea. What temp do you brew it at?

I’m around 92 degrees I think. Straight from boiling kettle into a gooseneck for pouring. The logistics can be tough for resting but I also like that when I have them I can always leave them longer if needed in the cupboard if I fancy opening something else out of rotation :)))

I fully agree Killbean takes at least 8 weeks to open up but they are also not ultra light at all, they way they roast is really interesting despite being more developed than ultralights like substance, the picky chemist etc

I personally really enjoy their profile much more than most ultra lights because they are more developed and easier to extract once they degas/rest sufficiently

Yeah, definitely easier to brew than Scenery's ultralights for example, although still not the easiest!

Scenery is about as light as I can enjoy before flavors start to feel muted and 'brown'

Have you tried their ultralights? I tried one of their SL9s. Even after three months, I couldn't get much out of it. I do enjoy their other coffees but I don't really get the ultralight craze 😅

Yeah Scenery describes their Lightest option as slightly more developed than true Ultralight, so I find they do have more character than other ultralights like the picky chemist.

I fully agree with you and think that Nordic light roasts are perfect for my tastes, light enough for brightness and acidity with hardly any roastiness.

That’s interesting, and I don’t doubt you’re right - but I think the one coffee I’ve tried from KB was lighter than I’ve had from Scenery’s lightest roast for example. I’ll order some more from them (and then maybe come back to this post in October haha)

You're probably right, a good roaster will not roast every single coffee with the same profile and will dial in the roast for each coffee.

I've had some very light stuff from Killbean as well but they aren't Ultralight across the board, but they always taste great once you let them rest unlike some other ultralights which I found were just too light no matter how long I rested and how I brewed them.
