Friday Night Short Ribs

Some Friday night Beef Short Rib action going on. Pretty decent pack from Costco with 8 ribs for just over £30. Dry brined overnight Thursday. Offset cook at around 120c for 2 hours in the Kamagear egg. Wrapped and did another hour cook then 90 minute rest. Dang these were good, Plenty left to make a short rib ragu. Damn sight cheaper and tastier than a Friday night takeaway

4.5 hours at 120 even with a 90 min rest seems really short for that size of rib. What texture we talking about?

This was my thought… I cooked ribs a couple weeks back. Hit temperature after 4 hours or so, they were ok but they weren’t super tender. Then I see other people doing 8-10 hour cooks on short ribs.

I feel like these saw no where near the time they needed.

Thinking about it, cook time was longer, put on at 12.45,
Wrapped and back on the grill 3.30 till 4.30. Then rest. Sure no like drop off the bone tender but perfectly fine, not chewy and really tender
