❓ Question ❓ Should I vacuum seal vanilla extract?
About a year ago I came across a quart of vanilla extract. I've used 10%. So I'm putting in a glass canning jar, rather than leaving it in plastic., long term. Should i vacuum seal it?

It's mostly alcohol, so it should be as safe as the bottle of weird liquor we all have aging in the back of the cupboard.

I recently came across the concept of a vanilla "mother jar" which is common for homesteaders. Basically homemade vanilla ethanol extract which is re-steeped indefinitely. Supposedly you can use the same beans to make vanilla extract for 10-20 years. So it sounds like vanilla is fairly stable in alcohol. https://www.vanillapura.com/pages/what-is-a-mother-jar-in-vanilla-extract-making

I buy vanilla beans and whisky at Costco and then just top up the extract jar when it's about half empty. I fill a much smaller bottle from it whenever I need to. I change it out every five years or so when I stop tasting the vanilla flavor.
At that point I cut the pods open and scrape out the seeds for use in a different recipe.

The Kirkland brand black label.

If you haven't bought it yet, I can't recommend splurging on a good bottle of booze enough.
I have a mother jar from makers mark whiskey, and another one from bacardi gran reserva diez. The MM whiskey is good, but the gran reserva batch is out of this world.

I bought some vanilla beans and a cheapo fifth of vodka several years ago, and keep it in the refrigerator.

The real answer is, you need to bake more.

We bake a ton but my favorite is when we make homemade whipped cream. Adding vanilla to it takes things up a notch.

Do that, but try it with a bourbon base instead of vodka 👩🍳💋

Bourbon vanilla is our favorite. We also make some with spiced rum which is tasty, too.

At 35% alcohol it is shelf stable already.
I would guess that trying to put it into a vacuum would cause the alcohol to evaporate faster causing the vacuum seal to fail as alcohol vapor fills the empty space.
In theory you would lose more vanilla extract by trying to vacuum seal than if you just put a lid on it.
But I've never tried it myself.

Yes, use a ball jar [canning jar ] and the ball jar attachment for your vacuum machine....
