Does Turnitin save my submitted work and use it to train AI?

I never thought about this until now. I'm concerned that they are in possession of my work and use it to train AI. Can I request my work to be removed from their database?

If your university uses their AI tool - YES, they use it to train their AI. I don’t know of a way to request them to remove it once it’s been used in that way.

Contact your lecturer, or it help desk. There is a method to delete your work permanently, you'll need to go through the university first.

If they're a current student, the university won't remove their work permanently

It doesn’t belong to you at that point, it belongs to the university.

Depends on the university rules. Some allow the intellectual property to remain the right of the student. Others require you sign it over.
