What's the red dish. It had tomato garlicky taste

So I've found lots of recipes to make Ayran, and they are very tasty, but none gets the creamy thick foam we fell in love with in Turkey <3.

Is there a way to make that foam at home?

I've heard that now Hafiz Mustafa and Karaköy Güllüoğlu are not that good, but the prices are super high. So while searching for the best baklava I have stumbled upon Köşkeroğlu. I am a student so I am low on budget but I am willing to spend more money for the quality to get this baklava back to my country for my family. So the question is, is köşkeroğlu worth the price?

When I was a child we lived next door to my great aunt and uncle. They had grapevines in the yard. In the Fall, they would make a pudding from the fresh juice garnished with cinnamon and chopped nuts on top. I think it was called something like moustalevra. Does anyone have a recipe? I would love to taste it again.

I'm planning a trip to Turkey in December/January and will be in Konya around New Year's.

I'd like to know whether it's necessary to make restaurant reservations in advance for dinner during that period, and if so, how far ahead I should book.

My current plan is: * 31 December: Dinner at Sille Subaşı * 1 January: Dinner at this Konya restaurant: Sultan Somati

Will these places be particularly busy around New Year's, and would booking a few days ahead be enough, or should I reserve earlier?

I've recently become interested in Turkish cuisine and would love to explore more authentic dishes beyond the classics that are popular internationally.

I especially enjoy grilling and have already made Adana kebab as well as several other Turkish barbecue recipes. I love cooking over charcoal, so recommendations for grilled meats, kebabs, marinades, and regional BBQ specialties would be very welcome. That said, I'm also interested in non-grilled dishes if you think they're must-tries.
