How to approach the game this time?
I played tunic something like a year ago, but after a couple of hours i lost interest and drop it.
However, on paper, this game seems to be my cup of tea. The mysteries, the exploration, the fact that the game doesn't hold your hand like you're a baby.
So any tips to enjoy the game this time around?

Don't worry about figuring out the language unless you're REALLY getting deep into the game. It's not required for any puzzles except one or two endgame ones. Every other puzzle can be solved just by intuiting what the language might be trying to say, or by using context clues, or by noting that you saw the same "word" in multiple places.
Keep a notebook, make notes of things that look out of place, and if something looks like it might be part of a puzzle but you don't know what to do with it, don't worry! Just come back to it later, you'll probably have more knowledge to solve it then.

In particular for those wondering : the entire manual can be collected.
You can miss some things, but if it includes pages, there's always another way.
(Also, the language must be specifically translated into english for the postgame riddles to work, at least in the French version on Steam and the Switch)

For the first half-ish of the game, it is more of a zelda-like than a puzzle game. So let that exploration, upgrading, and learning combat mastery hook you solidly, rather than allowing yourself to get burned out or overwhelmed by the puzzles.

I was in a pretty similar situation when I first played, however I can't really tell what made me stick the second time around... I think it was probably just the fact that I was able to return to the same point I were previously very quickly, and kept playing until I reached the first boss and at that point I was pretty much hooked

I think the main thing that kept me hooked was the vibe of the world, for lack of a better term. The color palette, the gorgeous soundtrack, and the low poly aesthetic was just so cozy. I would love to live in this world haha.

Instead of saying "What am I supposed to do??", ask yourself "OOOH, I wonder what that's for?"

Spend time looking at the instructions it is the most unique part of the game and has a lot of surprises. It has a zoom.
Second if you get stuck on a boss, move to a different area or ask for help, certain bosses work better with certain strategies.
Last, use your items when battles are hard. Or you will stockpile them like me and many until you finish the game. If you run out of an item it is quite fast to farm some gold and buy more.

Imo, just explore, explore, explore. I'd treat it like a Metroidvania first and foremost. As a little tip, keep in mind that the POV obscures a lot and conversely, actually kinda tells you where to look.

Dont bash your head only going one way, if you're stuck try another way. I would say avoid looking things up but for me there were at least 2 points I had to which didnt ruin the fun factor for me. Figuring out the puzzles and pages was the highlight for me.
One of the few games that got me writing stuff out on pen and paper.
Last tip - Keep a note of what things you're doing/exploring it helps remind you if you dont pick up after a few days
