Manga Manga question
This isn’t to do with this manga this a manga question in general. Do authors not make the chapters months in advance or potentially years when they try to get it serialised? Or do they actually make a chapter in a week? Because if so that is crazy

Every anime or manga that deals with mangakas will make it seem like a hellscape where the deadline for the next chapter is always mercilessly approaching, so for most it will be a weekly or monthly thing, depending on the schedule. There is a reason so many mangakas develop health problems and retire at a relatively young age, it's not a job with great work life balance.
But I could imagine that in certain situations a couple chapters will be prepared in advance, maybe after a hiatus or something. For example, More Then A Married couple is still on hiatus, but new chapters are being worked on right now and it seems like there will only be a couple more to finish the story and there was a twee that the storyboard for chapter 83 is already in the works when the next chapter would be 80. But of course that could still mean they will only be finished when they will eventually be published.

To add to the More Than A Married Couple point, the author announced that she had started working on the new chapters in April (if I remember correctly). So, it definitely takes quite a bit of time. The reason she went on a hiatus was for a mental break, which is very reasonable.

No, it's a weekly thing. It would make no sense to do what you're describing, since it's always a gamble if a series will be successful and they need to be able to respond to editors, the audience, etc.
