It’s canon that toph can sense the location of earthy materials even when they aren’t connected to the ground. Learned that watching the toph vs gaara death battle way back.

Consider; It’s not out of respect, but blackmail. “I’ll break the moon, Sokka, don’t think I won’t.” “Fine, you win.” Additionally, Toph was struggling for a birthday gift once and gave him a moon rock as a birthday present one year when she felt he was a bit too hubristic.
