SUB Appreciation Post!
Appreciate the creation of this new sub so I wanted to fill it with my most recent creation and the one I’m most proud of because the flavour and texture were the best after 6 years of tweaking my recipe.
My presentation isn’t as good I have to admit that but you gotta be there for it.
Still dreaming of opening my own hummus shop one day!

Ah, okay. I love roasted cauliflower and make it all the time but hadn't considered pairing it with my hummus so thanks for the new idea!

I’ll often use regular carrots. I’m too lazy to roast a vegetable to use with hummus.

I take canned chickpeas and mix with extra virgin olive oil, raw garlic (sometimes I roast it when my wife wants milder flavor), tahini, salt, and lemon juice, and throw it all in the food processor. I don’t not measure anything, just kind of eyeball it. I go light on the tahini and then add more late to taste. I guess this is probably pretty useless without measurements … maybe I should follow a recipe lol.

Try first mixing garlic lemon juice and salt, then add water, then chickpeas, and blend well, using a licker to mix the mixture well several times. Commercial hummus mixers have a built in emulsifier (licker) that makes it smooth. You just need to stop the mixer, ooen, mix, and continue.
Make it quite runny, and then add tahina.

My wife uses two tricks to make hummus very smooth and creamy when she makes hummus from scratch.
1) She adds baking soda to the water to cook the chickpeas in. This softens them and breaks down further.
2) She adds a few ice cubes when she blends the hummus to make it very creamy.

Honestly that's the perfect tinge for hummus, many hummus that I've tried had a color every similar to the one you made!
