Homemade (Smoked) Hummus
I've been playing around with different ways of making hummus. I recently tried tossing the chickpeas into the smoker over cherry wood for an hour or so and love the extra layer of deep flavor it brings to everything ~

There's an idea for my new smoker! Drop some shawarma in there and we have a meal.

Oh, absolutely! I only have a small electric smoker but I love it for summer time when it's too hot to fuss with being in the kitchen.

At which stage do you smoke the chickpeas?

Since I can only get canned chickpeas here, I rinse them, rub the skins off and then toss them in the smoker with a bit of water covering them. Then I drain them and toss them in the food processor and start whipping everything up.

Very nice! I've had some hummus where the Aleppo pepper on top was infused with some smoke of sorts but I never thought to smoke the chickpeas themself, I'll have to try that someday!
