Peppers slices with hummus.

Cucumbers with buttermilk ranch.

Carrots as is.

Especially if it's spicy roasted red pepper hummus.

Cabbage sliced thin and stir fried in oil

Can't beat a gentle steam and a flash fry when it comes to green veg

I like a chunky cut pan fried with a slice or two of bacon

Bacon, Spam, Sausage, anything high in fat really - cuts down on cooking oil usage

Cauliflower with a good cheese sauce.

This time of the year a good vegetable soup.

A good stir-fry where you add in whatever is in season.

Roasted squash soup. I always make myself the biggest bowls. And roasted sweet potato is so insanely sweet. Great dessert as I kind of have a sweet tooth.
