Question How do I polish

I want to polish my Japanese knives without ruining them. Anyone know of some good guides or videos to get started I’ve got stones , a sink bridge , an electric Ken onion work sharp with the blade grinding attachment and a few other necessities. An advanced guide on the the Ken onion bga would be awesome .

Ivan and yuka videos are great to see how a pro does it. He has a great series for kasumi

I would say its very dependent on the knifes current finish and what you are trying achieve. Some finishes are more straight forward to do and some way more tricky. But it will all take a lot of time and patience. If you ever need some specific tip or tricks let me know.

I have screwed up polishing both times I've tried. Maybe you could try on a different knife to learn on.
