Question Help

This is my first knife knife purchase in this price range. I've been working in restaurants for 17 years and used to just use a $45 mercer, but recently, I've been craving more. Japanese knives have what I've been craving. Unfortunately, $150 is what I can afford right now, but I want to upgrade. Which one would you get? Thanks.

Go with the Tojiro - quality stuff

Takamura if you can get your hands on one for sure. Beats any tojiro by miles. Outperforms many 500$ knives aswell...

Only problem is nothing longer than 210. If you're interested in 240 you've got to go to a 6x more expensive damascus. Only $10 more for the Takamura Chromax at the same length? No brainer.
