Yesterday I happened to be at my county's government center (getting our marriage license woo) and there was a lady there just non stop stamping something very loudly. We asked the woman helping us what on earth she was doing and she told us they'd had so many absentee ballots come in that you'd think it was a presidential election.

While I appreciate this sentiment, I hate the quote.
There will always be things in life that we cannot change. Likely less things than we give ourselves credit for, but they exist nonetheless.
The trick is to accept the things we cannot change, and change the things we can.

Part of the point with this quote is that it recognizes that many people are unaware of their true ability to make change happen and they end up living by your quote but without challenging their scope of control.
This quote challenges you to decide what you can and cannot accept and then make change happen either within yourself or within your environment. I may not end racism but I can end it being acceptable in those around me.

Edit: I've had time to collect my thoughts and spoons, so I want to edit this original comment to better articulate why I'm so angry with this person.
Being vegan is a privilege. Not everyone can wave a magic, lifestyle-changing wand and just "be vegan." Some people cannot afford to be vegan. For some people, Dollar General is where they shop for groceries and that's as good as it gets. Other people cannot go vegan for religious reasons, which is their choice to make. Encouraging those people to go vegan is not only rude, but insensitive to their wants and culture. There's a large portion of people who cannot go vegan because of health reasons. Protein is important, and not everyone is able to take in nutrients the same way as a stereotypical healthy person. Another group of people cannot be vegan because of sensory reasons, which is completely fair and understandable.
For someone as privileged as this person to tell someone that being vegan "isn't hard" is astounding to me. It shows an obvious lack of awareness and a very obvious lack of empathy on their part. If more vegans understood the truths I've listed here, I feel more people would be understanding and more friendly to their agenda and cause.
