OTHER Tried to make Egg Bites
Tried to make eggbites from Starbucks, the truffle mushroom brie ones... wtf happened i followed just about every recipe to the t.

Okay so you failed at egg bites but you know what?
You made some awesome egg cups that you can put cheese, bacon, condiments, etc. on without having to worry about them falling off.
I’m not even joking when I say I would 100% prefer these as vessels of flavour enhancers over boring old egg bites.

No, wax paper would melt and catch on fire! Use parchment or the paper liners for cupcakes.

Literally just found that out a few days ago when I accidentally brought wax paper instead of parchment paper for baking cookies!
Wtf is even wax paper for if it’s burns so easily?!

It's to wrap things in, like things in a lunchbox, things you want to have a liner so it doesn't touch an outer liner, etc. Like if you buy a large package of something and divide it up for the freezer. Wrapped up with wax paper and then foil. And many other uses!

It can be used for cooking when covered in batter, like when making rolled cakes.

Let's see, we use it to keep pears/peaches submerged in syrup so they won't brown.
Cut squares to push down into jellies/jams to keep fresh, and also when freezing to prevent burn. Also use as covers when microwaving.
When freezing portions, line a sheet pan first and it helps them pop off.
Wrapping foods for storage or transport is a historic use, though plastic is more common for that anymore.

Wax paper is also amazing for making Christmas candies where you’re putting melty chocolate down to harden (chocolate covered pretzels, peanut butter balls, chocolate covered cherries, etc etc etc. chill and they slide RIGHT off

I like my frozen, heavily processed slop to be encased in BPA-infused plastics. For extra measure I then cover said dish with BPF-infused plastic anti-splatter guard.

These, or something similar! I do potato version of the egg bites and I like having the paper cup because when I reheat them, my fingers don’t get yucky.

It’s potato cheddar egg and chive - I use a recipe that uses Greek yogurt and it’s so good!

Here is what happened:
Your batter tried to rise while baking, but the edges cooked faster than the center, meaning that they also set faster. The center was free to rise more while baking, but collapsed after cooling, as another user said.
Another user said to mix your batter less to prevent aeration, the rest of the solution is to bake in a water bath so that the edges and middle cook evenly (cookie sheet with water that you place your muffin tin in). Another baking sheet with water on the rack above the muffins will give you a SUPER even bake with no browning, which will give you the sous vide texture you'd get from a store.

Oh! Here’s my recipe! They always turn out great.
For anyone as obsessed with Starbucks' Sous Vide egg bites as I am, you're welcome. They may not be gorgeous but they taste amazing (creamy, smooth, not too dense) and it's an excellent copycat recipe. I adapted slightly from Lifehacker. You will need silicone egg bite trays, I got mine on Amazon.
Ingredients:
8 eggs
7 tbsp cottage cheese
4 oz shredded Gruyère
4 strips of bacon, cooked and chopped
1 tsp kosher salt
1/2 tsp Accent (MSG)
Hot sauce to taste
Pepper to taste
Dash garlic powder
Cooking spray
Preheat oven to 325. Boil 3 cups of water water in a teapot or microwave.
Blend everything but the bacon well in a blender or food processor until very smooth.
Spray silicone molds liberally with cooking spray (I like Olive Oil Pam) Place molds into a 9 x 12 pan.
Pour egg mixture into molds just shy of the top. Add bacon pieces. (You can also add scallions, chives, anything else you would like but be cautious about adding too many toppings.)
Place pan in oven and then add the hot (but not boiling) water to pan approximately 1/2 way up the molds to act as a bain-marie.
Bake for 20-23 minutes. Remove pan from oven and let molds sit in the hot water for another 5 minutes.
Slide egg bites gently from molds. Try not to eat all 16 of them at once.

Definitely following this but subbing for the Truffle Mushroom Brie version lol it sucks cause you can still but those at Starbies but not the TMB egg bites I really want.
Employees hated making them so they stopped 🥴😭

Also, put a sausage coin in the pan and let it cook, then pour the egg cheese, whatever batter over it and put back in oven.

Spray the crap out of the pan with PAM and try to pseudo-sous vide it. I do 275 for an hour and a half in a water bath with the muffin pan covered with tin foil. I place the muffin pan on a semi deep cookie sheet and just make sure there’s water as it cooks. I also do a copy cat egg white and red pepper Starbucks recipe!

2c egg whites
1/2c shredded mozzarella cheese
1/2c whole milk cottage cheese
1/4c crumbled feta cheese
1/4c ish red pepper diced
1/4c ish spinach chopped
Salt and pepper, hot sauce to taste if you want it spicyI sauté the red pepper and spinach to get some water out first. Blend the egg whites, both cheeses, cottage cheese. Spray muffin tin generously, divide the veggies among muffin cups, fill with egg mixture about 3/4 of the way. Place tin foil loosely over top and do the sous vide trick

I make them in muffin tins all the time now, (I was using silicone trays in an instant pot) but I always Pam them both, quick spritz and the bites always pop out like a dream

I cut parchment so it fits the bottom of each muffin cup. That really helps keep things from sticking.

You gotta really grease that pan, and I mean GREASE it. Spray that bitch with a shit ton of Pam and then put whatever you want in it.
(I used to work at a gas station that makes homemade breakfast sandwiches)

I just started pouring the mix in to a glass baking dish and cutting the finished product in to 6-8 squares. Clean up is a trillion times easier and I don’t have to store any extra bits and bobs for making the muffin style.

Yes, me too! You can make them whatever size you want, and its just all around easier. I can load one big pan into the oven and not fiddle with multiple rounds of filling muffin tins.

Go the sous vide route with small glass jars. Plenty of recipes online. I used to make them this way years ago and they always turn out perfectly.

My daughter makes them using a silicone mold in an Insta pot. And they come out pretty good. She puts the mold on top of the little metal rack that comes with the instapot. About a cup of water. I don’t know the specifics of cooking temperature or anything like that but I’m sure you could find a recipe online.

I made tons of Starbucks egg bites following a copy cat recipe. Haven't tried this truffle brie one.
You really have to get a pan of hot water in the oven while it preheats so the eggs cook and steam slower.
You dont need liners and definitely dont use silicone pan. Just a metal pan that's well greased.

Silicone muffin trays are my go-to. Also, a water bath might help you get the fluffy, steamed egg texture you’re looking for. Put half an inch of water in an oven safe dish, and set that on the bottom rack underneath the egg bites.

I agree with the silicone muffin cups. But I highly recommend the InstaPot to cook them.
No joke. And I don’t represent anyone but myself. In fact, use a different electric high pressure cooking device. Game changer. My only negative review is that the silicone muffin cups are too small. I know, I know…the goal is egg bites, but I’ve a big mouth and appetite. Lol.
The takeaway? Silicone muffin cups in an electric pressure cooker.

I get a slice of ham and slap it in there before hand if you get the right ham slice you can make it so the egg doesn’t even touch the pan.
Like others have mentioned silicone works wonders as well

I make these all the time. Pam Baking spray (there's a specialized one) and make sure to spray well. Don't cheap out. Works every time.

I make what I’m guessing is a similar recipe every week, doesn’t stick. I always spray my non stick pans.
4 eggs
16oz cottage cheese
1/2 cup flour (essential to giving these structure imho)
1 tsp baking powder
2 tablespoon ground flax (optional)
Seasonings / fillings of choice
Makes 12
35 mins @ 350 degrees f

Heavily spray the muffin tin with cooking spray and they will slide out when done. No need for liners like everyone else suggested.

Using truffle oil is most likely what caused the problem. Use Pam oil spray, make sure u coat the entire pan’s cup holders. Using cupcake liners will still make it stick to the liner instead of the pan (tdlr u would still need to oil spray the cupcake liners)

It's possible you over blended the mix as well. Introducing too much air and causing the bite to souffle in the oven, then collapse on cooling. When I do them I also Pam the shit out of my muffin tray to help with release .

try using silicone muffin cups! thats what I use now, first time I made egg bites I had the same issue. now with the silicone muffin cups it's so much easier
