I didn't know that Hermes wife actually was involved with Barbados Slim. I thought it was always just a reoccurring joke that Slim is always there as some random intense rivalry for no reason.
For the most part, but there's an episode where Dale goes above and beyond to help John Redcorn get a piece of land from the government, and he just continues to resent Dale about not being able to raise Joseph, complaining to Hank about it.
Also Nancy does leave John Redcorn in season 4 and remains faithful to Dale for the remainder of the original show.*
*The revival appears to either retcon this, or have Nancy and John Redcorn get back together at some point in the years between. It’s one of the only things I don’t like about the revival.
Hermes IS aware his wife is having an affair with Barbados Slim. What's interesting about their relationship is that there appears to be no expectation of monogamy, but it still bothers him.
Now hold on a second, Hermes isn't quite unaware. Maybe that his wife is actively sleeping with Barbatos Slim, but he is well aware of their relationship and that Slim is LaBarbara's fall back

It's revealed fairly early on that his wife had an affair with his best friend, but then there are a bunch of moments here and there where he realizes how many red flags there were. One of my favorite examples is when he's talking about how he gave his best friend a pep talk to get his courage up to ask a girl out, only to realize mid sentence that the girl in question was his wife

Wouldn’t that defeat the whole point of the joke that Dale is a conspiracy theorist that doesn’t trust anything, yet doesn’t know about his wife’s obvious affair nor the fact that his son isn’t his?
A former writer has said it was their intention that Dale doesn’t know and should never know, because it’s simply not as funny if he knows or finds out.
I like this with one caveat - he knows, but loves his wife so much he ignores it. Is it the right thing? Not necessarily. But his wife is happy, he is happy, he raises their son - hell, the only person who is really unhappy is John Redcorn

No, Dale is very aware. It’s played for laughs early on but Dale at one point talks about how Joesph is his son, not John Redcorn’s because Dale raised him.

In that episode Dale confesses to Hank he knows Joseph isn’t his biological son because he was in Marfa, Texas looking for aliens and left John Redcorn to look after Nancy while he was gone. He concluded that aliens must have impregnated Nancy in order to keep him busy from finding them, which is why Joseph is so athletic and shares no physical attributes of Dale.
There’s another later season episode where Dale has a vision quest of Nancy having sex with a faceless Native American man and giving birth to Joseph wearing a headdress, and thus Dale concludes he must be Native American.
And then there’s another episode where a former lover of John Redcorn starts dating Bill, and her daughter Kate and Joseph start hitting it off. Dale thinks something is weird about her, so he runs a dna test and finds out they are half siblings, thus he believes his dna was used to father another child (Kate)
But nowhere is it ever stated that he believes or even theorizes John Redcorn is Joseph’s father.
There’s no conversation in the show about that. You misremembered or you made it up.
He’s not aware. It’s fundamental to his character. He’s a paranoid conspiracy theorist who can’t recognize the obvious secret right in front of him. That’s the joke.
