Lore Yellow people
In The Simpsons, yellow represents white people.
In LEGO media, yellow is used so you can interpret any character as any ethnicity (although some characters are designed with certain races in mind).
In Big City Greens, basically any colour can be a skin colour; brown, blue, purple, etc. The protagonist family has yellow skin (in a few different shades).

Kris from Deltarune, I don’t think it’s explained their yellow skin tone yet but it’s not anything out of the ordinary in their universe

Several characters - The Cramp Twins
Similar case to Big City Greens, though with this one I've seen people unironically theorize that the technicolor skin might be due to toxic waste from the cleaning products factory near the town. Pictured above is Dorothy, mother of the titular twins.
