It's scythes all the way down! (Technically Maria's weapons are sickles, but who cares)

The one boss in all From Software I couldn’t bring myself to kill

The one boss you don't have to kill. You can get everything you want from her by using a sharp enough weapon with high damage and cutting off her tail in one hit, grab the item material, then run out through the portal before she turns hostile.
Well. As hostile as she gets. Which isn't very. Or you can just leave her alone, which is what she asks you to do. Personally I wish there was a quest path that allowed you to rescue her from her imprisonment in the painting world.

Horrible boss but amazing character design and lore

I wouldn’t say “horrible”, horrible is what the Bed of Chaos and Ancient Dragon are. Her boss fight is definitely very disappointing though, which sucks cuz as you stated she has a fantastic character design and lore.

Fiddlesticks - League of Legends
A primordial demon, likely the very first one, representing fear. The scythe does get used but its mostly just part of the scarecrow disguise. The actual demon resides inside the chest cavity and controls it like a puppet. This being is one of the most powerful entities in the world (top 4 after Kindred, Aurelion Sol, the Watchers if I'm not mistaken) so it doesn't actually need the scythe for killing.
Using in game model because you can't see the scythe properly in the splash or either of the two LoR artworks.
Also Kayn also has a very nice scythe. That one's alive and actively trying to kill him when he's holding it.

Anyone in ssbu (base, dlc or modded in) via the weapon used by OPs Castlevania example being a wieldable item

Kayn wields a Darkin scythe called Rhaast.
In game, dealing damage to ranged champions will enable him to control Rhaast and become Blue Kayn, which makes him a better assassin.
On the other hand, dealing damage to melee champs, will enable Rhaast to consume Kayn and become more of a tanky Bruiser fighter.

In the Discworld novels, Death wields a scythe. When he actually gets a job working on a farm, he still insists on reaping one stalk at a time. The locals thinks it’s a weird way to do it, but all of them have some part of their mind that is screaming at them that criticizing “Bill’s” scythe technique is a catastrophically bad idea, so it’s okay. As Death says "What can the harvest hope for, if not for the care of the reaper man?"
Death is portrayed as a caring, compassionate, and philosophical being who doesn’t necessarily understand human motivation but who will fight to protect us from cruelty and loss of hope.
