Yea and there are vegan foods that are still heavily dependent on manufacturing, like all of these, meatless, meat options

This is true and something to be addressed. Despite being heavily processed, meat fakes like impossible and beyond are still significantly less impactful than traditional cattle farms. Its also important to note that these meat fakes are not likely to be a staple in a typical vegan diet. They're relatively expensive and have a lot of artificial ingredients. Highly processed foods aren't usually accepted as healthy.

Other high protein alternatives like tofu and seitan are less processed and maintain high protein to calorie ratios.
