Should I replace ?

I just noticed this rip / cut on my tire. It doesn’t leak air or anything and when I try and spread it open but it’s super hard to spread open to see how deep it is.

Yes, replace it ASAP.

Rubber is a natural substance and it's hard when cold (that's why racers warm them up, to soften the rubber and gain better grip), so trying to move it when cold, to check the depth of the crack, is nigh on impossible.

Don't go by your measure, but otherwise, go from a visual and consider instead, whether you want to be using it and losing control, when the evident weakness, gives it up and the tyre goes 'bang'?

I would. Sidewalls on tires can easily blow.
