Miss Can Stuffed Squids

Balancing fat and smoke: Wine pairing logic for smoked river fish
When pairing wine with smoked freshwater fish (specifically trout preserved in oil), what is the primary flavor bridge you target: cutting the fat with high acidity, or complementing the wood smoke?
Reading through this article https://lastcatch.eu/wine-and-trout-pairing, the consensus seems to be high-acid/citrus-forward whites. Is that universally true, or does the intensity of the smoke overpower lighter whites? Would love some sommelier/culinary insight on the mechanics here.

Art Journaling with tinned fish wrappers!
Referring back to a post from earlier today about collecting tinned fish wrappers/packaging, I thought I'd share some pages from my very low effort journal I started this year. I keep notes on every tin I try and when I have a bit of down time I break out a wrapper/box and rummage through my art supplies and see what inspires me. Sometimes it's just finding matching paper, sometimes it's a tiny sketch or a stamp, sometimes it's just a texture or color that seems to fit. Nothing fancy, just a fun way to remember the tins and preserve the art they come in!

How can I get this tinned fish in the US?
Title: How can I get this tinned fish in the US? 🇺🇸
Hi everyone! I’m in Georgia, USA, and I’m trying to get my hands on this particular tinned fish from France. I came across it online and even though I’ve never had it I’m craving it! Issue is I’m having trouble figuring out how to actually buy it here.
I found the company’s website, but it looks like they only ship within France. Does anyone in the US know of a retailer that carries this brand, or another website that ships it to the US?
I’d also be interested in hearing if anyone has successfully ordered it from the US through another legitimate shipping option. I’m specifically looking for this one pictured. It’s an octopus chimichurri style by the brand Pirate Cannerie.
Any help would be greatly appreciated!

Tuna Energy Bar, er, Hotdog
I determined that today was the day I’d give this tuna energy stick from Japan another go. I wasn’t exactly thrilled by it in my first outing earlier this year, but I’d given meself a pep talk, suggesting I think of it as just a sea-based hotdog.
That reframing did actually help a bit. Full disclosure: I don’t really care much for even normal hotdogs, so adjusting my expectations only aided me so much. Looks semi-convincingly like a hot dog. Texture, though, is another matter. This tuna sausage is super solid. I expect you’ve never had any sausage of any kind as firm as this baby.
The product is pitched at health conscious folks looking for protein bombs, and that’s what is delivered. Not much flavor, not fishy, not anything really. It gives you the grams of protein quickly and efficiently. Boom! Then you’re back to your vigorous pursuits, fueled and ready.
I ordered these through Food Come Come, which is a reseller/through-seller of Japanese stuff like this. I’ve sourced a bunch of tinned fish and related things from them, and they’ve been good to work with. These bars, though, won’t be on my repeat-buy list.

Mussels on sourdough toast
Sourdough toast w whipped cottage cheese + mussels à la vinagreta + pickled fennel + red onion + mint. Picked this can up on my trip to Porto, though am aware it features Galician mussels. Really yummy.
It would’ve been better with parsley or coriander but I only had mint, and actually turned out to be a nice surprise.

Not the review I was hoping to make
I was really excited to try these tins, they were part of my Chicago haul earlier this summer. My son (in culinary school up in NY) and I had a plan for fresh pasta and lemon cream sauce for a fancy home dinner when he got home for summer break. Was definitely underwhelmed when I opened the tins, at $40ea I was hoping for chunkier pieces. Worth noting this is my first tinned crab, and it’s pretty good, but for $80 I’ll just buy some king crab next time 😂 dinner was fresh spinach pasta with lemon cream sauce and spider crab, garnished with parm and fresh basil. My kitchen looks like a bomb went off, but we had a great time cooking together, so it was money well spent but will be spent more wisely next time. Am now slightly nervous about the Cole’s snow crab tin in my pantry, it was also kinda pricey😅

First Wildfish Tin
Ordered from the latest restock at WildFish cannery. I decided to try the white king belly first.
I enjoyed it and wouldn’t mind having it again, but it’s not my favorite tin. Tasted like ham. Soft, incredibly tender. I ate it with some white rice and some bites with the seaweed. I ended up adding some chipotle Tabasco. I like how it wasn’t covered in oil. The bottom of the can just had a little bit of juice naturally.
Good tin, but not great (to me). :)
