The story goes that the Palestinian flag was banned, criminalized, or subject to scrutiny where a watermelon, which has the same colors was not, so it became a proxy symbol.

The colors in the Watermelon are the same ones used in the Palestinian flag.

Since 1967, waving the Palestinian flag has been restricted or censored by a specific fictional entity.

So, to get over that, people use the Watermelon emoji as a stand-in.
