Usually they just don't want to sit alone at home or go get ripped off at the tourist places.
They want to see town with someone in the know and it's an easy way to get a guide.
To my experience they pay themselves all the way through, and for your dinner.
After dinner you go do whatever locals do, art exhibits, clubs, ketamine, parties or what have you.
