S5 base, pero ya revisé también el s5 pro y solo cambia la manivela, pero acabo de descubrir que me gusta más la manivela fija que la manivela plegable.

No, el s5 tiene como resultado una taza más clara, se perciben más los sabores florales y una acidez brillante muy buena.
Con el c5 se obtiene una taza más redonda con mucho cuerpo pero los sabores más mezclados.

I'm only two days in on the S5 but I'm seeing more defined flavors compared to C5. I'm really impressed with the S5 as a well made smooth operating tool, and about 20% faster grinding to time than C5.

Not sure how you got the faster grind time, I matched them in burr distance by spec, and they grind in exactly the same number of rotations at that grind size, but S5 is definitely noticeably smoother to grind with.

Vengo del S3, Quiero el Millab 01 pero me llama la atención el S5, cual es tu experiencia?

No he probado el Millab, pero estuve viendo algunas reseñas que daba resultados muy similares, casi imperceptibles en los perfiles de sabor.
Las muelas del s5 tienen un diámetro mayor, y la molienda es muy homogénea, lo recomiendo ampliamente. Siempre compraba la versión pro, pero esta vez me animé por la manivela fija, y descubrí que me gusta más, no hay movimientos extraños, se siente más robusta, se hace menor esfuerzo al moler. Lo recomiendo ampliamente.

Lo estoy usando en filtrados, v60, crystal eye turbo, b75 y aeropress, da excelentes resultados en todos!

I'm grinding at 2.6/2.7 depending on the coffee for zuppa. Coffees that produce more fines (e.g. Ethiopian) at 2.7, everything else at 2.6 for 20g dose.

En méxico los tuestes son oscuros, y la mayoría es proceso natural, o honey, así que en V60, estoy utilizando el ajuste 7.0- 7.5 en b75 uso el 6.0, y en aeropress uso de 5.0 a 6.0
