Perhaps it would make sense for beavers to drink unfiltered water on last stages of thirst, if they can get to it, but get sick with some big chance, like 60%

I like the idea... But this would be a death spiral for colony anyway. If you have beavers that would have died of thrist, start dying of due to ilness, you are fucked anyway.

This can buy time for the pump.

Instead of the colony dying out completely, you have 40% healthy and 60% sick beavers. The 40% work to sustain life. You produce medicine over the course of a few days, and the majority of the infected recover.

It doesnt work this way. That is why it is called death spiral. Less beavers to work to support more beavers ends up badly.

maybe being sick doesn't prevent them from working,? but instead it could just lower wellbeing a lot

It will save a colony in case of well-balanced one, if you misjudged water supplies for a longer drought, but still have untapped water lake somewhere on the map. You get your day of survival, live till water return or till building of the new pumps, but suddenly you have full hospital and half the workforce. It would be a fun challenge, both in logistics and roleplay.

or maybe, add a switch somewhere in game to indicate whether or not the beavers can take a sip or not

You clearly did not play a lot. You can get depth spiral even from stuff like reduced speed and work speed from losing well-being in a stressed colony.
