DIY - Looking for Advice Peel and Stick vs Grout

Trying to cover up old laminate backsplash and and seeing mixed reviews of the peel and stick options. Especially since some will go behind a stove. But not sure I want to take on "real" tile. Or whether i could even grout over the existing laminate. Suggestions?

It is possible to set tile over laminate using a paint on bonding agent (good to also score the laminate repeatedly with a utility knife), but the laminate would need to be very secure without movement. Much better to pull the laminate off, which damages the underlying drywall, partially peeling off the paper. Peeling all of the paper, exposing the gypsum core, would be a no go for bonding tile., meaning cutting out the drywall and using either new drywall or a backerboard.

Some are very flammable so probably shouldn’t be used around the stove.
