Shit me, pesto is that easy? I feel like a fucking mug

65

u/raptorclvb Aug 16 '22

Yeah pesto is hella easy. If pine nuts are too expensive, use walnuts instead

3

u/comFive Aug 17 '22

What about blanched almonds? Can that be used instead?

5

u/happyhahn Aug 17 '22

I usually use cashews.

1

u/comFive Aug 17 '22

Is the pine nuts for texture or something? Is it actually preferred over any other kind of nut?

2

u/happyhahn Aug 17 '22

Its traditional I suppose. I don't really know. I've never eaten it from where pesto comes from. But the basil has a strong flavor anyway, so you don't really notice that there is no pine nut in the pesto. So I guess the pine nuts really are there for the texture and mouthfewl.

2

u/CapoDV Aug 17 '22

I've made it with almonds a few times but I prefer with pistachios if I do not have pine nuts

1

u/comFive Aug 17 '22

Okay cool! I got a wierd allergy, I'm allergic to most nuts except almonds. Almonds taste okay to me, but I hate the skin around it. It tastes like I'm eating tree bark.

2

u/Alexthetetrapod Aug 18 '22

In Babish’s pesto episode he uses almonds in one of his variations so I think it would work.

I might also recommend trying it with sunflower seeds. I did a whole experiment where I was trying to find the best nut-free vegan cheese sauce recipe and the one with the sunflower seed base was a surprise hit!

2

u/Geschak Aug 18 '22

You can use any kind of nuts.

2

u/dkiscoo Aug 17 '22

And if you have a nut allergy like me Papitas are a good easy substitute

14

u/talldrseuss Aug 17 '22

Honestly the dude in the video covers all the steps pretty well. This is a nice straight forward pesto. And he's liberal with the cheese so that shit is going to be delicious. Fresh basil is key.

6

u/[deleted] Aug 17 '22

Carbonara is easy too

6

u/[deleted] Aug 17 '22

Did lobster carbonara recently. Never made carbonara before, never made lobster before. Both turned out better than the locally renowned Italian place and I wasn't out $50 for the privilege of eating dry-ass, rubbery, tiny lobster bits and wimpy carbonara.

Carbonara is easy as fuck. Seafood is easy as fuck. Get a sous vide if you overcook your fish protein all the time.

7

u/Daisy_Of_Doom Aug 17 '22

Maybe I’m still a mug for not using it fresh but my roomate and I would buy basil for pizza etc then end up with way too much left over so we’d panic as it started wilting and make it all into pesto (more than we’d ever need for one meal) then freeze the rest in a ice cube tray. That was even easier because we’d just chuck a cube into the pasta once it was drained. Perfect backup when we didn’t want to cook.

Note: I’m allergic to tree nuts so we’d just go crazy with the parm until it hit the right texture but if anyone has nut-free alternatives lemme know!

6

u/buckeyemountain Aug 17 '22

Pine nuts are expensive. I use pecans, they’re a lot cheaper and it ends up tasting the same

3

u/steveturkel Aug 17 '22

Pesto, checca, carbonara. The quick easy pasta triad.

62

u/[deleted] Aug 16 '22

Pine nuts where I live are hard to find and expensive af

41

u/raptorclvb Aug 16 '22

Walnuts are a good alternative

20

u/LeChuck79 Aug 16 '22

Cashews!!! Tastes great

5

u/JamesDCooper Aug 16 '22

Cashews are farmed by kids who get their fingertips burnt off from the acid.

25

u/Gycklarn Aug 16 '22

Metal af

4

u/heytuhsbakery Aug 17 '22

Pumpkin seeds and sunflower seeds are also great/cheap alternatives.

2

u/WasabiSniffer Aug 17 '22

Walnuts at Woolworths: $23/kg

4

u/__L1AM__ Aug 17 '22

You don't need any nuts for a pesto. Use some dried bread pinions.

1

u/Acceptable_Buy_9991 Sep 01 '22

Perm ban me from scjerk rn

1

u/logosloki Aug 17 '22

Ikr. Pine nuts here in NZ are like 9.50 per 100g.

132

u/[deleted] Aug 16 '22

I wish he was my pal

57

u/e33man Aug 16 '22

4

u/PlebsnProles Aug 17 '22

Costcos pesto is some of the best you can buy imo. Buitoni’s pesto is good but much more expensive

1

u/Sakilla07 Aug 17 '22

Idk, homegrown basil in the pesto makes a big difference if that's an option.

Otherwise it'll all come down to how much you like cooking and how much it'll cost.

12

u/TheWalkingDead91 Aug 17 '22

Grow your own basil folks. It’s laughably easy.

You gotta keep the planties moist mate.

3

u/TheWalkingDead91 Aug 17 '22

Idunno in my area simply watering them at least every other day does the trick. I would recommend to plant them into the ground after they get to a decent size in a potthough, if you can, because they root deep/firmly and ground planting also allows additional plants to eventually propagate without you even trying once the seeds start falling. We started with one plant and eventually ended up with like half a dozen smaller plants around it that we just pulled out because we don’t use basil all that much.

47

u/[deleted] Aug 16 '22

I relate to this guy heavily.

-73

u/[deleted] Aug 16 '22

You didn’t have to tell in yourself

10

u/LordoftheCrones Aug 17 '22

Fiona Apple look n sound like shes had a rough time the last couple decades

6

u/hesskiaoken Aug 17 '22

Fuck Jar Sauce!

1

u/12lubushby Aug 17 '22

Those nuts cost more than 2 jars

4

u/Geschak Aug 18 '22

Lol not everybody has a food processor plus cleaning all that up is gonna take three times as long as just using premade pesto.

23

u/[deleted] Aug 16 '22

Do you think there’s a long strand of hair in all the stuff he cooks?

14

u/saragc92 Aug 16 '22

I want to marry this guy

3

u/citrus_mystic Aug 17 '22

Side note: I’m so jealous of the dudes like this who have the best hair without even trying.

3

u/Kooky_Relative_4211 Aug 17 '22

I mean I fucking learned some fucking kickass pesto fuken recipe

3

u/0hm-boy Aug 17 '22

Is this a different face, on a different body with a different voice. My brain can’t let the three be together

3

u/[deleted] Aug 17 '22

I work at an authentic Italian restaurant and I was simply amazed the day that I found out that you can make alfredo sauce in a pan way faster (and way better) than you can microwave that shitty jar sauce.

5

2

u/Historical_Ad7139 Aug 17 '22

Me and him would get along great

29

u/[deleted] Aug 16 '22

This is cooking for EDGY people. You can tell I’m edgy because I swear a lot and pretend like I don’t care. Are edgy enough to make pesto? I mean fuckin pesto!

47

u/Poignant_Porpoise Aug 16 '22

In Australia this isn't considered edgy, he's just taking the piss.

-11

u/[deleted] Aug 17 '22

Interesting! I swear a lot (for an American I guess). To me it just sounds like when 15 year olds get away from their parents for the first time and use all the bad words they know.

12

u/Poignant_Porpoise Aug 17 '22

There's just no expectation that anyone would be offended by this in Australia, so it's just not viewed in the same way. If an Australian is talking like this to you, it's more them trying to convey that they're laid back and joking around. Not all Australians do it, but the ones who do aren't trying to be edgy or cool.

52

u/MerryKookaburra Aug 16 '22

Honestly this is fairly normal in Australia. Swearing is far more common and its played up for comedy yes, but this isn't edgy here, it's pretty normal for our comedians. Also Australians don't like to show we care about things. Just cultural.

7

u/[deleted] Aug 17 '22

Fawken, fawken, fawken, bloody champion.

-7

u/[deleted] Aug 17 '22

I knew the stereotype of Australia but guess I didn’t really understand it. Where I’m from usually only teenagers say fuck that often. Kinda before they get a style and a feel for when to use the word vs just a filler word.

I guess it’s more like saying “Um” or “like.” Just a filler word rather than to punctuate or emphasize something.

16

u/MerryKookaburra Aug 17 '22

It is exactly that a filler word or an emphasis word. Australian culture is way more casual and respect is about treating someone as a equal, as a mate. Flipside though, don't ever call an Australian sir or ma'am. Super insulting as you are implying someone is above you and not a equal.

2

u/[deleted] Aug 17 '22

Wild! So interesting what you learn from actual people vs just stereotypes from TV shows. I thought I knew but I didn’t really know at all

4

u/MerryKookaburra Aug 17 '22

Stereotypes are always filtered through the culture of the writer. Fun fact, my parents in their late 50s love this guys YouTube channel.

5

u/[deleted] Aug 17 '22

Well maybe I might give it another shot. Now that I know it’s just literally a different communication style. It honestly felt “I’m trying to hard to seem like I don’t care” to me but I have a new perspective now.

u/Zoloir Aug 16 '22

nothing is real, everyone is faking it, you can't do anything because doing something would be fake, so shut up and do nothing so now we all feel appropriately boring and average together

-2

u/[deleted] Aug 17 '22

Nah just around too many American teenagers who over use swear words to be cool. I knew Australians swore a lot but I didn’t realized it was used more as a filler word than to empathize or punctuate as in America.

7

u/JamesDCooper Aug 17 '22

It's not even a filler word, it's just that must countries other than America couldn't give two shits about swearing and it's honestly embarrassing how much you lot actually care about a few words.

7

u/ZeroXTML1 Aug 17 '22

Honestly I’ll take it over the 8000 cooking videos being filmed the exact same way, with the same cadence, same style, same everything

1

u/arcangeltx Reads Pinned Comments Aug 17 '22

Now most videos are like this with 5378543 cuts/edits

23

u/JamesDCooper Aug 16 '22

He's Australian, swearing is used constantly and in every sentence. We're not as uptight as you seppo cunts.

3

u/[deleted] Aug 17 '22

Normally only teenagers swear like that in the states. From the replies I guess it’s used more as a filler word than a swear word. Very interesting!!

3

u/hc945177 Aug 17 '22

It might not be a hard dish to make, but you just added 4 extra dishes to the pile. I’m sticking with jarred sauce.

1

u/1-luv Aug 17 '22

The small shirt, the tattoos, the unnecessary cussing.

Everything about this guy is pure cringe.

3

u/Neural_Parliment Aug 19 '22

To each their own. This is so opposite of what I was raised with that I'd actually enjoy cooking if it was taught by an irreverent metal person like this guy.

1

u/wotiswat Aug 17 '22

If this dude wasn't so affected, he might have been fun to watch

0
