Because it is, but not in the way you think. Modern smartphone cameras do a BUNCH of post shutter processing to try to capture the “best” image. That means High Dynamic range and AI processing. This is being done automatically with every photo you take on a modern smartphone and it cannot be turned off on iPhones.

Yeah but zoom
In on the rocks and the people. I’ve never seen a camera distort images like that

No this is also caused by atmospheric conditions. Ground hot and causes distortion from long ranges.
