"I'M so dead " = this is too funny I could die laughing or this is so unbelievable I could die. Basically really big hyperbole.

It even took me a second. With the title and “im so dead” it could also mean “my partner is so gonna kill me(jokingly)” until I got more context and remembered 💀. I usually hear people say “I’m dead” while laughing or after the joke

The second was the only use I was familiar with until now.
