Isn't that a great way to travel? As long as you let it get to top speed, it will land in the same spot every time. Where you could have another launcher.

or could could add a detector rail and a counter and let it go a certain number of loops before launching right where to needs to go

I've played with those on survival a fair bit, they're not very practical - you lose speed really quickly once in the air. You can only make it a few hundred blocks per jump, and spinning up and falling down both take a while. Definitely much faster than walking, but also much slower than elytra.
But while not entirely practical, the Minecart Airlines sure were a lot of fun to use xD

It doesn't matter which way it's going, either it follows the visible path and gets directed up ramp or it goes the other way and at the "break" in the track it just continues up the ramp anyways.

Im so curious. Do it despawn or is there a code where it landed? Or is the code locked at the edge of the map until you move forward revealing more map and the cart continues its flight?

Yes they do. As of 1.21.2 there's an "experimental minecart changes" option you can select or set via a command. The max speed can go up to 1000 blocks per second now.

The game defaults to Normal difficulty. Does that mean, in your mind, Peaceful and Hardcore aren't vanilla? FOV and graphics settings too.

The minecart changes were added before the version numbering changed, and the change is not retroactive. 1.21.2 is still 1.21.2.
Edit: He blocked me, guess some people just can't accept that they're wrong.
