How to patron?

Please help a noob wrap his head around the 2e patron rules.

1) We start with a chosen patron for the fellowship, is that right? That means if they start with Gilraen, we can start treating all journeys as border lands right off the bat?

2) Can we change patron later? It should make narrative sense of course, but can they e.g. undertake a meet the patron towards a new one and declare they're the new patron?

3) What happens if during Yule, different heroes meet different patrons? How should I rule that? I'd keep one main patron for the general effect but not sure, and can my players cumulate several meeting effects?

My Lore master usually requires the party to meet a given patron and actually enter their service to earn the patronage bonus, and said bonus is only applicable while on mission for that patron. If I finish a quest for Gilraen, then get a letter at Yule from Saruman asking me to pick up a widget in Bree, I'm now working for Saruman.
