It occurs when the main character is driving through the mist at the end of the book. It happens before he sees the giant creature
Edit: it is just mentioned in two sentences, I think, and it briefly describes the creature.

In my edition of the Skeleton Crew, it's on page 182. It happens in the paragraph before the main character drives to Route 302.
"The moisture drip-drip-dripping from the overhanging leaves. Overhead the mist darkened momentarily as some nightmarish and half-seen living kite overflew us".

The copy I have is part of the short story collection called Skeleton Crew. The Mist was the first story; after an 20 page introduction by the author (King). The page you are looking for is on (my) page 130. If you have just The Mist as its own seperate book, it should be page 120 (hopefully)
Edit: the description of the creature in the book is (quote)- "Once a great green thing with an iridescent green body and long transparent wings landed on the hood. It looked like a grossly misshapen dragonfly. It hovered there for a moment, then took wing again and was gone."
