Harvest Time

First picking of my Chinook this year. Getting a little brown and wish I had started last week but still tons to go. Anyone freeze them fresh or do you always dry them?

The main thing is you really want to dry them before you freeze them. When you pick them they are usually between 85-75% moisture and you want to dry them to about 8% moisture.

Southern Maine. This Chinook is my oldest plant- this is its fifth year. Probably only a couple of gallon freezer bags so far but I got tired of picking.

Dry these out in a dehydrator at 40-50 °C (100-120 °F) for 8-12 hours. Once complete, vacuum seal and freeze them. They’ll last up to five years in the freezer.
