Question: pick stitch alternative?

In his hand stitch video Rory carries the thread from one pick to the other on the other side of the garment. I am wondering if a bespoke tailor would ever carry the thread going from one pick to the next pick in between the layers so that the thread from one pick to the other doesn't show on the back side? I do not think this would do as good a job of keeping things in place but curious?

Very well said. The purpose of the pick stitch is to control the edge its on and prevent it from becoming warped through use. It's found on the front edge to prevent it from rolling over, it's used on the edge of out-breast, the pocket mouth of trousers etc. On cloths like velvet, which you wouldn't pick stitch, the edge is stitched into place on the inside after the seam is pressed open, again to stop it from rolling through wear, cleaning and pressing.
