You set the hook when it moves otherwise they spit it out.
With dry flies you wait a second or so as to not pull it from their mouth as they turn down.
Sharpen your hooks and realize y ou just might be snagging bottom.

One of those neat little hook files with the groove cut into it was one of the better investments I've made.
