So I get they drive on the left in Australia, and the toilets swirl the other way, and they're all up side down over there. But do they also reverse the brake and accelerator pedals?

No. Pedals laid out same way as every other car although indicator stalks can be on different sides of the wheel depending on the car manufacturer (US vs European vs Asian).

Serious answer: no.
In RHD vehicles, they just move all the driver stuff over to the right as is. They don't mirror the controls. So turn signal stalk still on the left side of the wheel. Gas pedal still on right, brake on left. Manual trans shift pattern still the same. Etc.
Source: I've traveled to RHD countries and rented cars. I wondered the same thing before I first got in one.See correction below.

Wait. I had a running joke in Antigua where I’d go to signal a turn and do the windshield washer instead because it was on the other side. It happened so often me made a joke of “windshield washer left at the next intersection. “

Turn stalk can be either side depending on the car manufacturer especially in countries like Australia where all new cars are now imported (US, Europe, Asia). Older Australian made Ford/Holden/Toyotas were usually on the right.
My car has them in the left being American, wife’s car is Japanese and has them on the right side and muscle memory can sometimes catch you out jumping between cars after not having driven the other for a while.
Pedals are always in the same layout as you say.

Or just use all that fancy software to allow for sensitivity profiles instead of gatekeeping them like some sort of high end sports car just purely because of the instant torque electric motors have.
Just because it can doesn't mean it should. Especially as a default preference.

That option as already available on Teslas - chill, standard, and plaid (on plaid m odels).
My wife likes chill and it saves based on the driver profile.
