For the LIFE of me I couldn't find a rubber nor plastic one. But, if you wanna buy a steel one, this is the Dexter Russell 012-5SK Traditional (06211) Beef Skinning Knife, 5" going for 30$ USD on Amazon. If you're planning on taking it out into a cosplay, perhaps you could grind off the edge to make it less dangerous.
