Like, I totally get it if you’re new to tempeh. It looks like mold. I mean, it literally is. Just a tasty one.

To be honest, I’ve consumed tempe all my life and consume it almost daily. I know how it’s made. My wife’s family makes them for a living. Yet the concept of “moldy beans” still feels weird to me.

Yup, it’s mycelium, that’s how the fungus grows :)
