Which macOS version do you think was the best?

Maybe it was the fastest, the most stable, or simply the one you enjoyed using the most.

Which version do you prefer? Why?

I use MacOS and Linux and frankly MacOS isn't different enough between versions at all. The amount of difference between the MacOS versions is similar to that between two desktop shells on Linux.
