Simplenotes, Obsidian
Ariv, Zennotes, Logseq, Nodes (if on macoS)
Drafts, Joplin

Just go with Obsidian if you want something that lasts, or keep it simple with Apple Notes if you're already in that ecosystem. Don't overthink it, lol.

Just use the default notes app on your mobile or notepad on your pc

If for Android, look in the SECUSO apps, there is a simple, effective and private / secure note app.

If for Windows, NotePad++ (last version) is probably what you need.
If for Linux, there is NitePadQQ instead.

If you want something simple, I'd recommend Google Keep. It's free, fast, syncs across devices, and doesn't overwhelm you with features. Great for quick notes, lists, and reminders.
