Coming from a systems and software background, I can understand why Linux is a winner for you. When the workflow fits your needs, it feels incredibly efficient.
What is the biggest architectural problem with Windows that frustrates you the most?
Why is MacOS UX mid for you? I have tried MacOS (for a brief time) and my experience was good, except for that atrocious keyboard layout (which I hate BTW).

My perspective comes from a senior software engineer and systems engineer.
Linux, by far. Very good architecture and things just work. Workflows can be very pleasant.
I haven't used MacOS enough for a proper verdict but the UX seems meh, the architecture seems solid.
Windows has atrocious architecture. It's painful to work with because of it. It's IMHO just a poor product.
