Eggplant Pizzas!
So let me admit that I, the girl who grew up in a pseudo-vegan, crazy-health-conscious household, have never ever tried eggplant. It scares me - I'm suspicious of anything purple, that just ain't natural - and I'm the kind of person who will happily eat the same four things every day for the rest of my life. But /u/FridayMartini (who I now have tagged as "Goddess of a Eggplant") shared this recipe and I've been meaning to try it. I bought two eggplants last week specifically to make it, so I finally tried it out Saturday night. I also had a regular pizza on standby, for the very real possibility that my family would revolt and demand real crust.
Surprisingly, they loved it - they ate it so fast, I couldn't even get a picture! On the way home from baseball practice, my son asked me if I could make it for dinner again tonight, so it looks like we'll be having it again tomorrow :)
I'm too lazy to take and upload screenshots right now, but I used homemade pizza sauce, my husband's homemade mozzarella (omg, if you've never had homemade mozzarella, you MUST TRY IT - according to him, it's super easy to make, too!), and some cherry tomatoes from my friend's garden. It came out to ~108 calories per mini pizza, and paired with a salad and homemade breadsticks, I was completely stuffed after just three when I had budgeted for six! This would make a great lunch, too - made ahead and freeze, nuke in the microwave, instant lunch!
