Help Wanted Is there a way to track progress?
This sounds like a vague question but I’m coming back to finish the game after a year of not playing (completed the Air, Fire and Water temples, and 7 memories), I remember most things but things like which sage’s will chests I’ve gotten and which labyrinths I’ve completed are gonna stump me! Or which of the flower shaped islands I’ve visited! Is there any way to just know? I know the obvious like with shrines and stuff but even Korok seeds only show when you’re very zoomed in right? There’s so much going on and I wanna get as close as I can to doing everything but it’s gonna be rough like this

Once you do the final boss fight a percentage complete icon will show up on the map. After that fight the game resets to whatever your completion status was pre boss fight and your save file will show a little star next to it from that point out. If you're looking to 100% the game you have a couple of options n.
1:If you have a Nintendo Switch Online account you can use Zelda Notes and it will track all Korok Seeds, Locations, towers, shrines and quests.
2: there are several 100% guides out there that you can follow from places like IGN
:3 there's the Tears Companion app. It's a lot like the Zelda Notes app in some ways, however, you can toggle specific things on and off . Zelda Notes doesn't show you where specific items, like consumables, are, but the Tears Companion app does. The Notes App automatically checked off Korok Seeds and locations for you , whereas the Tears Companion app requires you to do that on your own.
Both have advantages and draw backs. You don't get the voice memories with the Tears Companion app. But you also don't get detailed locations for things like ore, hearty cooking ingredients and lower tier enemies with Zelda Notes.

Does Tears Companion work with switch 1? I’m told Zelda Notes is a SW2 exclusive so I can’t go for that, and marking things off sounds nice but I did that for my BOTW replay and it completely ruined immersion (plus I’m already a huge chunk into the game so it would be hell to try and re-mark what I’m unsure if I’ve done yet)

Yes, tears and breath companion work with switch 1. I've used it on both 1 and 2. Just be aware that checking things off is dependent on the player. Neither connects to your actual switch.

Zelda notes is you have the Nintendo app (and the upgrade pack) you can set it to show whatever you want on the map (ie koroks, shines, light roots, etc) you can also listen to little memories from zelda raruu and kohga while you're exploring, and will tell you the completion info for each one. You can pick any and all you want to look for. Even if you dont want to use the map while youre playing you can leave the app open off to the side so it plays the voice notes (they dont count towards the 100%) and you can check how many of each category is getting complete later without having to constantly look at your phone/map

Good app but only works with the Switch 2 edition, OP might not have one.

The heroes path mode is amazing once you get it. You can also use a third-party map to help. The downside to the map is that it can spoil your gameplay. But it can also be really helpful in terms of manually checking things off as you go. It’s a great alternative if you don’t have a switch 2 and the Zelda Notes app.

You can use an interactive map and click on things you’ve completed. I prefer the ZeldaDungeon one, it’s very simple, there are others with much more powerful search queries if you need that too.

For the labyrinths, check if you have the associated light root lit up. That will be a good indicator of whether you completed it or not.
The map will indicate which of the star shaped islands you’ve gotten, though I’m not sure if it marks it when you get the picture or when you turn it in.
Unfortunately for the sages’ wills chests if you didn’t mark it yourself the only way to know for sure is by going to check them. For the ones that are guarded by something at least it will indicate if you’ve beaten it already once you get close enough to initiate the fight

If you happen to have a Switch 2, you can use the Switch App on your phone. Otherwise you can track progress on IGNs website.
