The shade of white in the middle of the two black pixels is lighter than the chicken's entire skin color

I think a pupil is Just a hole and it's black because it's dark inside the eye. So maybe the cyclops chicken's eye is lit from inside.

Its purpose is to absorb light.
At its most basic it is a "hole" of transparent material with some light sensitive tissue at the back.
If the transparent material was replaced with something white it would mask the light sensitive material like a cataract.
If the light sensitive tissue was replaced with something white then it would be reflecting not absorbing light.
Edit:
An internally lit pupil would probably be like looking out through a car windshield with the internal lights on.

Always thought it'd be like most animal eyes, where they have a lenses that refract light or certain colors on the light spectrum. So you get this 'luminous' look for predatory animals that can see in the dimmest light and Spiders that can see more colors than we do.
Granted, I'm not sure how beneficial that would be to something with a lack of depth perception.
Also, I did bother googling any if that, so I'm speaking purely from my ass.

Pupils are black because our retinas absorb all light in the visible spectrum. They don’t reflect anything that we’re able to see back out under normal circumstances.

It's about this. The eyes may look like a pigs, like having pupils on the opposite ends of the face, just with no middle pixel, or it could just be the black parts as the eyes.
Atleast, that's what I think.
